The Ears of the Forest

Wood ear mushrooms are found on host trees all around the world. They grow to look like real ears and are mainly found on elder trees as well as birch, ash or any soft tree trunk. Rich in B vitamins, this mushroom is used as a heart conditioner in Chinese medicine and in dishes such as stir-fries where it absorbs the rich sauces and becomes a delicacy.
